Avocado Dill Dressing
Ingredients:
3 ripe avocados
2 lemons
1 bundle dill
1 tsp salt
1/2 tsp pepper
Instructions:
Cut the avocados in half. Remove the pit carefully. Scoop out the avocado and add to a small blender.
Squeeze the juice from 2 lemons into the blender.
Add the dill (as much as you like. I add a lot because I love dill)
Add the salt and pepper.
Blend until smooth and creamy.
If you want the texture more thin add cold water 1/4 at a time.
NOTE: Can be stored in the fridge in an airtight container for 3 days.
