Carrot Cake

Ingredients:

  • Crust

  • 2/3 cup oatmeal

  • 2/3 cup coconut mass/shreds

  • 3 tsp coconut sugar

  • ½ tsp vanilla powder

  • 10-15 juicy dates (medjool)

  • 1 tsp cinnamon

  • ½ tsp cardamom

  • 1 tsp salt

    Massage in:

  • 2 large carrots, grated

  • 2/3 cup walnuts

  • Cream cheese

  • 2/3 cup coconut cream

  • 2/3 cup soaked cashews

  • 1/3 cup + 2 tbsp coconut oil melted

  • 4 tsp lemon juice

  • 2 tbsp agave

  • ¼ tsp salt

  • 1 cup walnuts for decoration.

    Instructions:


    Crust
    Mix the dry in a food processor, then add the pitted dates and run to a sticky mass.

    Mash in grated carrots and walnuts.

    Press into a round 9 inch pan. I add parchment paper in the bottom.

    Cream cheese
    Run everything in a blender to a smooth cream.

    Pour over the bottom and lightly crush the walnuts with your hands and sprinkle over.

    Set into freezer or fridge.
