Beetroot Quinoa Salad
Ingredients:
2 cups quinoa, cooked
1 medium beet, grated
2 green onions, chopped
1 can chickpeas
pinch of salt & pepper
Pea sprouts
Instructions:
Add the cooked quinoa to a large serving bowl.
Roughly grate the beet. Combine with quinoa.
Strain, rinse the chickpeas and add them to a small bowl. Add the pinch of salt and pepper to the bowl and stir.
Chop the green onions and add them to the salad. Combine well.
Add the chickpeas to the salad. Press them in carefully.
Top with pea sprouts, or any sprouts and add the avocado dill dressing on top.
NOTE: Feel free to add nutrional yeast or any probiotic such as kimchi or pickled onions. Also, feel free to add any leftover veggies from your fridge like we did in the picture below.
