Vegan Cobb Salad

Ingredients

  • Chopped Romaine

  • 2 cans of chickpeas

  • 1 cup grape tomatoes, halved

  • 1  cucumber,chopped

  • 1 cup grated carrots

  • 1/2 cup corn

  • 1/2 red onion, chopped

  • 6 slices cooked tempeh bacon, sliced

  • 2 avocados, sliced

  • Fresh dill

Red Wine Vinaigrette:

  • 1/3 cup red wine vinegar

  • 1 Tbsp Dijon mustard

  • 1 tsp maple syrup

  • 1 tsp minced garlic

  • 1 tsp teaspoon sea salt

Instructions

  1. Add all chopped salad ingredients to a bowl

  2. Whisk together dressing
