Creamy Cashew Alfredo

Ingredients

  • 16oz pasta (I prefer chickpea pasta)

  • 1 white onion, diced

  • 4-5, garlic cloves, minced

  • 1 1/2 cups raw cashews, soaked

  • 1 tbsp fresh lemon juice

  • 3 tbsp nutritional yeast

  • 1 cup vegetable broth

  • 1 tsp salt

  • pepper to taste

Instructions

  1. Add diced onion to a pan and saute with oil until translucent and fragrant, about 6 minutes. Add the garlic and saute for another 2 minutes.

  2. Trasnfer the onions and garlic to a high speed blender along with all other ingredients. Blend on high until a creamy consistency is reached. Add more broth as needed to thin it out. Taste test and add more salt, pepper and lemon juice as you desire.

  3. Serve over prepared pasta.
