Creamy Cashew Alfredo
Ingredients
16oz pasta (I prefer chickpea pasta)
1 white onion, diced
4-5, garlic cloves, minced
1 1/2 cups raw cashews, soaked
1 tbsp fresh lemon juice
3 tbsp nutritional yeast
1 cup vegetable broth
1 tsp salt
pepper to taste
Instructions
Add diced onion to a pan and saute with oil until translucent and fragrant, about 6 minutes. Add the garlic and saute for another 2 minutes.
Trasnfer the onions and garlic to a high speed blender along with all other ingredients. Blend on high until a creamy consistency is reached. Add more broth as needed to thin it out. Taste test and add more salt, pepper and lemon juice as you desire.
Serve over prepared pasta.
