Creamy Ten Minute Pasta Bowl

Ingredients:

  • 1 handful of cherry tomatoes

  • 1 red onion, diced into big chunks

  • Smoked Tofu, sliced (could be replaced with a can of chickpeas or beans)

  • Basil, chopped

  • Olive oil for drizzle before oven

  • Salt for seasoning

  • Red chili flakes for seasoning

  • 1 box of chickpea Pasta (I used Banza - click here)

  • 1/2 - 1 cup of your favorite hummus

  • Nutritional yeast and fresh sprouts for decor

Instructions:

  1. Preheat oven to F400.

  2. In an oven safe dish add tomatoes, diced onion. smoked sliced tofu & chopped basil. Note: Feel free to add any other veggies you might have left over in the fridge such as mushrooms, bell peppers, chilis, broccoli, etc.)

  3. Drizzle olive oil over the veggies and sprinkle with salt and chili flakes.

  4. Roast in oven for 10 minutes.

  5. While veggies are roasting, boil your chickpea pasta. Follow instructions on box for cooking time.

  6. Remove the veggies from oven and add the pasta to the dish.

  7. Add your favorite hummus (this is mine from whole foods).

  8. Stir well until all pasta is covered nicely in the hummus.

  9. Sprinkle the dish with nutritional yeast and pea sprouts for decor.
