Jackfruit Tacos
INGREDIENTS:
2 20oz cans green jackfruit in water, drained, rinsed, and chopped
1 yellow onion, sliced
½ lime , juiced
2 teaspoons chili powder
1 teaspoon smoked paprika
1 can of Black Beans
Salsa
Avocado
INSTRUCTIONS:
Cut the jackfruit into thin slices, creating a shredded texture
Add jackfruit, chili powder, paprika, and lime juice into a large skillet over medium-high heat.
When hot, add the onions and black beans and sauté for about 8-10 minutes until the onions have softened and begin to brown.
Add the chopped jackfruit,, lime juice and all the spices to the pot and cover. Reduce heat and let it simmer until the jackfruit softens slightly, and about ½ of the liquid is absorbed. About 5 minutes
Warm the taco shells according to the package directions. When warmed, the jackfruit and black bean mixture, and top with salsa, an avocado slice, and we like to add a scoop of Kite Hill cream cheese.
