Oil-Free Salad Dressing
INGREDIENTS:
One cup of cashews
Half a container of plain non dairy yogurt (we use kite hill)
3 tablespoons of apple cider vinegar
2 tablespoons of liquid aminos
1 teaspoon of granulated garlic
1 teaspoon of granulated onion
1 tablespoon of spicy mustard
1 teaspoon of black pepper
1 tablespoon of nutritional yeast
1 teaspoon of ginger
INSTRUCTIONS:
Add all the above mentioned ingredients to a small blender, blend briefly while adding water till you get the desired consistency. (if you add too much water, you can add more cashews)
Optional: can add fresh basil, parsley or rosemary. Herbs to taste.
Blend thoroughly.
This dressing has no oil, added sugar, and is very low sodium!
We add walnuts to top our salad.
