Cheezy Potato Wraps

Ingredients:

Potato wrap:

  • 4 Large Yellow Potatoes, washed and sliced finely.

  • 1 cup shredded vegan Cheese of your choice. (I like VioLife a lot)

  • Cracked pepper

  • Oregano

Filling (this could be anything you would like):

  • 1 cup spring mix

  • Roasted cauliflower (Cauliflower florets, olive oil, salt and paprika roasted in the oven @400F for 20 min)

  • 1 tbsp hemp hearts

  • 1 tbsp nutritional yeast

  • 1 avocado, sliced

  • Sprouts

  • Lemon Tahini Dressing

Instructions:

  1. Turn on the oven to 400F (200C).

  2. Line a baking tray with parchment paper.

  3. Add 9-12 potato slices to make a square. Make sure they overlap so the potatoes can bake on to each other.

  4. Spinkle a generous layer of cheese over top of the squares and crack pepper over the top. Add herbs now.

  5. Bake in the oven for 15-20 minutes or until cheese looks nice and melted with a slight brown color to it.

  6. Let them cool for 10 minutes before loading them on to the plate or else they will come apart. The cheese needs to hold it together.

  7. Load the potato wrap with anything you want on top. You can see what I did above. I also go for a solid combination like fresh and crunchy, something baked, a good creamy dressing and hemp hearts/nutritional yeast and sprouts.
