Power Cookie Dough

Ingredients

  • 1 can chickpeas, drained 

  • ½ cup almond flour 

  • 2 tbsp oat flour

  • 4 tbsp almond butter

  • 6 dates, pitted 

  • 1 teaspoon vanilla 

  • 1 teaspoon baking powder 

  • ⅓ cup chocolate chips 

  • Pinch of salt

Instructions

  1. Add the dates, almond butter and vanilla extract to a food processor jar and pulse to obtain a puree.

  2.  Add the chickpeas, almond flour, oat flour and baking powder. Process again to obtain a thick, smooth and creamy batter.

  3. Transfer the cookie dough into a bowl, add chopped chocolate and mix with a spoon.

  4. Can be eaten immediately or after refrigeration for a harder consistency.

  5. Optional to add protein powder of your choice.

  6. Can be baked @ 350F for 10-12 minutes for an insanely delicious cookie.
