Gluten-free Breakfast Buns

Ingredients:

  • 600 ml warm water

  • 1 tsp maple syrup

  • 1 tsp rice or apple cider vinegar

  • 3/4 tsp salt

  • 1 1/4 tsp baking powder

  • 22 g psyllium husk

  • 30 g chia seeds

  • 35 g oats

  • 50 g buckwheat

  • 50 g corn flour (not starch)

  • 100 g brown rice flour

Instructions:

  1. Mix all dry ingredients together in a food processor. Mix quickly to combine.

  2. Mix all the wet ingredients in a separate bowl.

  3. Add wet ingredients to food processor and start it.

  4. Mix for about 5 minutes or until dough starts coming together.

  5. Pour mixture out on a parchment lined tray. Make sure to add some flour to the parchment paper. Dough will be a little sticky.

  6. With a spatula even out dough until 1 inch thick.

  7. With a sharp knife cut 9 squares and spread them out gently, they can be a little sticky, if so add a little flour to your hands.

  8. Separate slightly and bake in oven at 400F for 35 minutes.
