Gluten-free Breakfast Buns
Ingredients:
600 ml warm water
1 tsp maple syrup
1 tsp rice or apple cider vinegar
3/4 tsp salt
1 1/4 tsp baking powder
22 g psyllium husk
30 g chia seeds
35 g oats
50 g buckwheat
50 g corn flour (not starch)
100 g brown rice flour
Instructions:
Mix all dry ingredients together in a food processor. Mix quickly to combine.
Mix all the wet ingredients in a separate bowl.
Add wet ingredients to food processor and start it.
Mix for about 5 minutes or until dough starts coming together.
Pour mixture out on a parchment lined tray. Make sure to add some flour to the parchment paper. Dough will be a little sticky.
With a spatula even out dough until 1 inch thick.
With a sharp knife cut 9 squares and spread them out gently, they can be a little sticky, if so add a little flour to your hands.
Separate slightly and bake in oven at 400F for 35 minutes.
