Mini Almond Muffins

Ingredients:

  • 2 tbsp flaxseed meal

  • 6 tbsp water

  • 2 tbsp apple sauce

  • 1 cup 3 ingredient almond milk (like malk or califia)

  • 1/2 tbsp lemon juice

  • 1/2 cup coconut sugar

  • 1/8 cup avocado oil

  • 2 tsp vanilla extract

  • 2 ¼ cups almond flour

  • 3/4 cup arrowroot/potato/tapioca starch

  • 1/2 cup brown rice flour

  • 1.5 tsp baking powder

  • 1 tsp baking soda

  • 3/4 tsp sea salt

  • Pinch cinnamon

  • 1 tsp hemp hearts

  • 1 cups fresh blueberries, chocolate chips or chopped fruits.

  1. Preheat oven to 375F and line a mini muffin tin with mini paper baking cups.

  2. In a stand mixer add flax and water.

  3. Measure out your milk, and add the lemon juice to it. Gently stir and set aside.

  4. Add the sugar to the flax mixture and mix. Then add the oil, vanilla and milk/lemon.

  5. Add the almond flour and all remaining ingredients plus the fruits, blueberries or chocolate.

  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. Remove from oven and let cool in the tin for 5 minutes. Then remove from the tin and let cool completely on a cooling rack.
