Toasted Sesame Soba Bowl

Ingredients

For Vegetables: 

  • 1 green onion stalk 

  • 1 red bell pepper 

  • 1 zuchinni 

  • 1 head of broccoli 

  • 2 cloves garlic 

  • 1 inch ginger 

  • 1.5 tbsp tahini

  • 2 tbsp tamari 

  • 1 tsp agave 

  • 1 tsp apple cider vinegar

For tofu  and marinade 

  • 1 block extra firm tofu

  • ½ cup tamari 

  • 4 tsp agave 

  • 1 tbsp olive oil 

  • ¼ tsp red pepper flakes

Noodles: 

  • 75g soba noodles (or any noodles of your choosing) 

Optional Toppings: 

  • Sesame seeds 

  • radishes

  • Edamame 

  • Parsley 

  • Sriracha 

Instructions

  1. Cut all green onion, bell pepper, zucchini and broccoli

  2. Finely chop garlic and roughly chop ginger

  3. Drain and press tofu to remove as much water as possible

  4. Heat 1 tbsp oil in pan, once hot, add veggies. Let cook  stirring frequently 

  5. While veggies cook, whisk tofu marinade ingredients together

  6. Chop tofu into slices and let sit in marinade for a few minutes 

  7. Cook soba noodles in boiling water for 3-4 minutes.  Once done, strain and rinse with cold water

  8. To veggies, add tahini, tamari, agave and apple cider vinegar and stir to combine

  9. Once veggies have started to char (about 5-7 min), slide to one side of pan to make room for tofu 

  10. Add marinated tofu squares to pan and let cook 1-2 minutes (until charred) and then flip to other side

  11. Once both sides are charred, remove from heat 

  12. Plate meal.
