Pearson Peach Mint Marmalade

Ingredients:

  • 10 Pearson Farm Peaches (NORDIC15 gives 15% off)

  • 1 cup monkfruit sugar (or regular cane sugar)

  • 2 tbsp freshly squeezed lemon juice

  • 1 tbsp vanilla powder or extract

  • 10 fresh mint leaves

Instructions:

  1. Peel, core and chop the peaches.

  2. Add the chopped peach, sugar, lemon juice and vanilla powder to a saucepan and bring to a boil for 3-5 minutes.

  3. Remove from the heat and stir well until the desired consistency is reached. I leave mine a little chunky.

  4. Add the mint and stir carefully.

Pour into warm, thoroughly cleaned jars. Seal. Store in a cool place.

This marmalade works well on sourdough bread with roasted peaches and a sprinkle of rough sea salt.
