Spinach Croquettes
Ingredients:
250 grams of frozen spinach
400 ml of plant milk
1/2 cup of vegetable broth
3 tbsp of olive oil
1/2 onion diced
2 chopped garlic cloves
3/4 cup of GF flour
1/2 tsp of salt and pepper
Breading:
1 cup of bread crumbs
1 cup of plant milk
Oil for frying
Instructions:
Thaw spinach - remove excess water.
Peel onion and chop garlic finely.
Mix broth and milk.
Cook onion till succulent.
Sift flour in and stir. Add milk slowly. Stir well.
Add spinach, salt and pepper.
Cool in fridge 3-4 hours or overnight.
Do breading and fry in oil.
