Vegan Spinach Artichoke Cups
Ingredients:
30 mini fillo shells
3 cups of frozen spinach (thaw and drain liquid)
1 14 oz can of chopped artichoke
1/4 cup of vegan mayo
1/3 cup of vegan cream cheese
2 tsp lemon juice
1/3 cup of Panko breadcrumbs
2-3 tbsp of nutritional yeast
3/4 tsp granulated onion
1/2 tsp paprika
1/2 tsp chili flakes
3/4 tsp salt
Fresh cracked pepper
Instructions:
Combine ingredients and fill shells
Bake at 375 F until golden on top
